- In a vessel take some water and put chopped brinjal and keep aside.
- In a pan add oil, chana dal, urad dal, cumin, mustard, red chili, curry leaves and fry for about 2 minutes.
- Add ground nuts and fry until it turns to golden color.
- Add chopped brinjals and saute well for 2 to 3 minutes.
- Add turmeric powder, salt and jaggery saute well.
- Add tamarind water and vangibath powder, mix well and cook for 5 minutes or brinjals are cooked.
- You can also add a handful of cashews or peanuts for extra crunch.
- Add cooked rice and mix until rice is properly mixed with masalas.
- Add coriander leaves and gently mix it.
- Tasty brinjal vangi bath is ready to serve.
