
Wheat mathri is a very simple deep fried snack. This snack looks and tastes like a crispy cookie. This wheat mathri is a very unique and flaky and crispy cookie. Usually cookies are baking, it is frying that is one of the major differences I noticed. It is one of the very famous snacks in North India, which is usually made with Maida or all purpose flour, but I have tried with wheat flour. Flour is not giving too much difference in taste of course it affects color. It is also called wheat mathi, mathari, mathiya.
One day when I was scrolling through YouTube I found this beautiful and unique recipe. So I thought of making this snack luckily all the ingredients are in my pantry. So in the evening I started after eating this. My kid and husband both are liked very much. After this when i’m not getting much time to preserve snacks, then this recipe is saving me. My son is always telling me, ” Ammaaa Please prepare crispy cookies..
For making this mathri I used wheat flour with fine rava. The Addition of Rava is making it crispy more than you think. For spicy added pepper powder and red chili powder, making a spicy mathri is completely your desire. You can make a sweet version of mathri just by adding sugar as sweetness. For the flavor I added crushed ajwain and kasuri methi, jeera. These ingredients are giving flavor, taste while eating and for kids they give immunity to them.
After spreading the dough, I will make a hole, otherwise it will become fluffy when we are frying in hot oil. Then mathri is not like a cookie it becomes vada. So we need to make a hole with the use of a fork. Here, I have used a round shape of a cutter that exactly resembles a round shape of cookie. So, you can vary the shape or size of the mathri how you like. While frying the flame should be medium otherwise not crispy from all the sides.
After cooling down the mathri store in an airtight container. We can store three weeks at room temperature. This snack does not add any preservatives. This mathri can be given to a toddler or kids for a snack box.

- Take a mixing bowl, add wheat flour, semolina , jeera, crushed ajwain and kasuri methi, red chili powder, pepper powder, salt, ghee and mix everything until it gets moist.
- Add water gradually and knead the dough.

- Divide the dough and roll it to a thin layer.
- With the help of a fork, make holes.
- Take a cookie cutter or shaper and make round shapes.
- Repeat the process to all the dough
- In a deep bottom pan and keep oil for frying.
- Leave one by one and fry it on low flame.
- Once it turns to a golden color remove from hot oil to an absorbing paper.
- Cool the mathri completely then store in an airtight container.
Notes
Spiciness can be adjusted to your preferences. If you want a sweet version, skip the spicy instead of adding sugar. You can vary the shape and size of the mathri.
