  • In a kadai add oil, mustard seeds , garlic and saute well.
  • Add curry leaves and green chili and fry for 2 minutes.
  • Add onion slices and saute well or until it softens.
  • Add tomato slices, red chili powder, salt and mix well.
  • Close the lid and cook for 5 minutes in the simmer.
  • Once tomato and onions are completely cooked, then add coriander leaves and mix well.
  • Super easy and quick tomato stir fry is ready.
  • Serve with chapathi, roti or rice.
