Methi Pulao is one of the healthy recipes and also tastes delicious. It is very easy to prepare and packed with a lot of nutrition. Methi pulao is great flavoured rice, a balanced meal and also considered one pot meal. It is served with plain curd or raita.
I personally like methi leaves and many recipes made out of these leaves. Simple methi leaves pulao or adding vegetables for this recipe. Two versions of pulao are my favourite and healthy too. But this is simple methi leaves pulao and this is a completely gluten free and vegan recipe.
This recipe is made in a pressure cooker adding all the ingredients together so this is one pot meal. You can try this recipe with leftover rice or making separate rice and masala then adding together. We can prepare the methi pulao. The taste is the same but the procedure is different. Making the pulao in the cooker is the easiest way to prepare the pulao.
The methi leaves are slightly bitter in taste so I fried the leaves before adding the rice. Adding fresh whole spices enhances the flavour and gives a beautiful aroma to the pulao. Methi leaves have some mud when you buy them from the store so first you should clean it and wash it well. So this is a major task while preparing any recipe from the methi leaves. Spices and masalas are added fresh because it gives a good aroma and tastes also so good. I always prefer fresh masala for pulao and other recipes.
The methi pulao is eaten at any time like breakfast, lunch or dinner. We can prepare lunch boxes too. Every generation will have this recipe and for everyone it is healthy and kids will love the flavour.

- Take a mixer jar add garlic, ginger, cinnamon, star anise and green chili then grind to a coarse powder.
- In a cooker add some ghee or oil, add prepared masala and fry for 2 minutes.
- Add onion and tomato fry for 3 to 4 minutes
- Add clean and chopped methi leaves and fry for a minute.
- Add turmeric powder, chili powder and salt and mix well.
- Add washed rice and water. Mix well. Close the lid and make 3 whistles.
- After cools down, open the lid and sprinkle some coriander leaves.
- Yummy and tasty methi pulao is ready. Serve with raita.
