All ingredients are easily available in the kitchen for preparing the sambar powder. I have used simple spices and it is a simple recipe and when you make the sambar out of this sambar powder, you feel just amazing in taste.

Here I used normal and fresh spices for making the powder. Red chillies can add your spice level.  Urad and chana dal must be roasted till brown color or aroma gets. These two lentils give a good aroma and make a super taste to the sambar. Cumin are completely optional. Methi seeds and hing i have used for making the sambar powder. While roasting the spices flame should be in medium, otherwise some will be burnt some will not roast properly. Here roasting is a major task.

Preparing the sambar powder does not need much time, it will take only a few minutes. Once you are done with powder, store in a glass jar or airtight container. Using a dry spoon while taking the powder will increase the shelf life of sambar powder. Easily you can store the sambar powder in room temperature up to one to two months.
