  • Rinse the moong dal under running water until the water runs clear.
  • Soak the dal in water for about 30 minutes. After soaking, drain the water and cook the moong dal .
  • In a large mixing bowl, add the whole wheat flour and a pinch of asafoetida, salt, saunf, turmeric powder, red chili powder, garam masala, coriander leaves and mix well.
  • Gradually add water and knead the flour into a soft, smooth dough.
  • Cover the dough with a damp cloth and let it rest for 15-20 minutes.
  • Divide the dough into equal-sized balls.
  • Flatten the dough ball gently and roll it out again into a larger circle, about 6-7 inches in diameter. Be careful not to press too hard.
  • Heat a tawa or flat griddle over medium heat.
  • Place the rolled paratha on the hot tawa and cook for 1-2 minutes, or until small bubbles appear on the surface.
  • Flip the paratha and apply ghee or oil on the cooked side.
  • Cook for another 1-2 minutes, pressing lightly with a spatula, until the paratha is golden brown and cooked through.
  • Flip again and apply ghee or oil to the other side. Cook until both sides are golden and crispy.
  • Repeat the process with the remaining dough and filling.
