  • Take a mixer jar, add thin poha and grind to a powder texture.
  • In a bowl add ground powder of poha and add curd and mix well.
  • Add fine semolina and salt and mix well.
  • Add water gradually and mix well without any lumps. Keep aside for 30 minutes.
  • Just before making the idlis, add the baking soda or Eno fruit salt to the batter. If using Eno, mix it quickly and gently. The batter will become frothy and light.
  • Grease the idli molds with a little oil to prevent sticking.
  • Pour the batter into the idli molds, filling them about 3/4 full.
  • Place the idli stand in a steamer or idli cooker and steam the idlis for about 10-12 minutes on medium heat.
  • Check for doneness by inserting a toothpick or knife into the idli; it should come out clean.
  • Remove the idli stand from the steamer and let it cool for a few minutes.
  • Carefully remove the idlis from the molds using a spoon or butter knife.
