The Bottle Gourd rice is very easy and healthy too. For preparing this super healthy recipe we do not need much ingredients. This recipe combines bottle gourd, rice, and coconut. We need little time because separately we need to cook all the ingredients. The bottle gourd and rice separately cooking is very essential. Otherwise bottle gourd vegetable is over cooked and will not get pieces while eating.
Here I added creamy coconut by just grounding the fresh coconut. Instead of this you can add coconut milk. Both are giving good flavor and taste to the rice. Preparing coconut milk is a little more time consuming. So I used creamy coconut.
The sweet version also can be tried with the same recipe. For making sweets just add the required amount of jaggery. Both versions are also very tasty and delicious. In Malabar region also this recipe is quite famous. For onam sadya also we can prepare this recipe. Because it contains coconut milk. For sadya we must need one of the coconut milk recipes like olan. This is similar to olan.
