  • Take a Mangalore cucumber and take out the seeds and chop into pieces. If you need, you can peel the skin.
  • In a kadai add oil, red chili, urad dal, mustard seeds and curry leaves, prepare simple tempering.
  • Add chopped Mangalore cucumber and mix well with tempering.
  • Add salt, jaggery, red chili powder, turmeric powder and water
  • Mix well and close the lid for 4 minutes.
  • Then mix well, if required add water otherwise close the lid and cook until the vegetables are softened.
  • Add grated coconut and combine everything until water evaporates.
  • Healthy and tasty Mangalore cucumber stir fry is ready.
  • Serve with hot rice.
