  • Clean and wash the amaranth leaves and beetroot, chop into pieces and keep aside.
  • In a cooker add equal amounts of oil and ghee and heat it.
  • Add cumin, bay leaf, cinnamon, clove, cardamom, cashew nuts and roast for 3 -4 minutes.
  • Add onion slices and saute well for 2 minutes.
  • Add chopped tomato and saute well for 2 minutes.
  • Add ginger garlic paste and chopped beetroot and mix well.
  • Add turmeric powder, coriander powder, pepper powder and chopped amaranth. Mix well.
  • Add washed rice and required amount of water and mix well.
  • Add salt to taste, coriander leaves and stir well.
  • Close the lid and Cook for 3 whistles.
  • Once the cooker completely cools down, open the lid and mix well.
  • Tasty and delicious healthy amaranth and beetroot pulao is ready.
  • Serve with raita and Enjoy..
