Spicy Tukkudi are one of the easiest snacks to prepare. It is a simple and healthy snack too. Everyone loves this snack. Easily you can pack a kids snack box. Spicy Tukkudi / Diamond cuts are made in two types, one is spicy and another one sweet. Here I am showing how to prepare spicy diamond cuts. In our local language this recipe is called tukkudi or shankarpali. This is an attractive snack because of its shape.

 

Tukkudi is a very popular snack in Mangalore and Udupi region. I am a mangaloriean so no need of any preparation for doing this recipe. From my childhood I have been eating this snack. I love this snack very much. Because it is easy and you can store it for a long time.

Usually diamond cuts are made with all-purpose flour or maida. Here, I used wheat flour instead of maida. So it became a healthy snack. When you try this recipe in maida you will get a little whitish snack. When you are tried with wheat flour the snack will get a brownish colour. That’s the only difference I noticed with this snack.

Tukkudi is made with wheat flour and some spices. Red chilli adjust with your spiciness level. Cumin directly you can add or you can do little to crush the jeera. Adding of Sugar is completely optional, if you do not need then skip this step. You can use any cooking oil while kneading the dough.

While spreading the dough, it should be a little thin layer. Otherwise it will not fry well and it is not good in taste either. After spreading, roll the cutter and make into diamond shapes. You can give other shapes instead of diamond. You need to fry until golden brown.

If you need a sweet version of tukkudi, skip the adding of red chilli. Add more sugar while kneading the dough. After frying you can sprinkle some sugar on the diamond cuts. Then you will get sweet tukkudi or diamond cuts.

If you are gone with this recipe, you can store this snack for more than a week at room temperature. Enjoy this snack whenever you have a cup of tea or coffee.

  • Take a large mixing bowl and add wheat flour, red chilli powder, cumin, salt, sugar and oil. Mix all the dry ingredients.
  • Add water gradually and knead the dough. After kneading leave ten minutes and once again knead the dough.
  • Take some dough and spread some flour and spread to a thin layer.
  • Once a thin layer, cut into diamond shape. Transfer to a plate of shaped dough.
  • Heat the oil, fry until golden brown. Remove from hot oil to absorb paper.
  • Store in an airtight container and enjoy the diamond cuts.
