- In a kadai, heat 2 tbsp oil, add paneer cubes and roast for 4-5 minutes on medium flame.
- Once paneer cubes are roasted, take out from kadai and keep aside.
- In the same kadai add bay leaf, cumin, ginger garlic paste and saute for a minute.
- Add finely chopped onion and saute well.
- Add tomato puree and sir for 2 minutes.
- Add red chili powder, coriander powder, turmeric powder, salt and combine everything.
- Add sweet corn and water and cook for 5 minutes.
- In a mixer add soaked cashew nuts and grind to a paste.
- Once corn is cooked well add cashew nuts paste and mix well.
- Add roasted paneer cubes and cook for 2 minutes.
- Mix well and add kasuri methi, coriander leaves and mix well.
- Once everything is mixed, tasty and easy corn paneer gravy is ready.
- Serve with chapathi, roti and enjoy.
