Chutney powder is very simple and easy to prepare. While preparing the chutney powder first we need to clean the stems apart from coriander leaves. We need to wash several times because the stems contain lots of mud and dust. I have sun dried the stem for two days because it contains water. If the stems are fresh it contains a lot of water and we need to fry more and it’s time consuming. That’s why I sun dried the cleaned stems for one or two days. It saves my time in front of the flame. After sun dry it will take a few minutes to dry and after saute water contents goes well.
The spices I have added are chana dal, urad dal, sesame seeds, and cumin seeds for taste and texture. For spiciness added black pepper and dried red chillies. Turmeric powder no need to fry just add before grinding the roasted ingredients.Along with these ingredients you can add curry leaves, dry coconut, asafoetida, jaggery to chutney powder. It will increase the taste of the powder.
While preparing the powder, use a mixer jar without any water content. Also makes the powder without adding any water. Grind the mixture into a coarse or fine powder, depending on your preference.Store the chutney powder in an airtight container. It can be stored at room temperature for a few weeks, but for longer shelf life, it’s recommended to store it in the refrigerator. While using the powder, use a dry spoon for more shelf life.
