Usually vegetable Biryani made in pot or cooker. But I have done the vegetable biryani in bamboo. The name of this recipe is different and tastes too. Bamboo veg biryani is a unique and age old recipe. Bamboo Veg Biryani needs living coal and bamboo for cooking.

 

This beautiful idea came from one of my WhatsApp friend. She did vegetable pulav using bamboo. She shared her experience, recipe and some photos. By the inspiration, I got interested and enthusiastic to develop a recipe around it. In this COVID19 Pandemic, I was in native and also had a chance to get bamboo. With the help of my husband and brother, I planned for setting up a simple outdoor kitchen for making this delicious recipe.

Bamboo Veg Biryani is packed with nutrition, protein, fiber rich food. Because it is filled with lot of vegetables, spices, seasoning and rice. I have done simple vegetable biryani, cooking inside bamboo. Of course, it’s loved by everyone.

Cleaning of bamboo is not a tough job. It is easy and simple way and the first step. Just put little water and wash it well. As we are cooking in a bamboo, also we need to add rice and water so better not to take too small bamboo. Living coal method of cooking is traditional way, which I have followed. Now a day everyone looks for modern and easy way of approach to cook. Here i am using living coal for making bamboo vegetable biryani.

First step is to make some preparation for this recipe. Chop some ingredients like onion, carrot, beans, coriander leaves, mint leaves. Also spices like cinnamon, elachi or cardamom, star anise, cloves. Later i took a large kadai to mix the ingredients. For Bamboo vegetable biryani, I have used ghee for a good flavour. I have also added green chilly for spiciness, lemon juice for sour and salt for taste.

Take cleaned bamboo and add the prepared mix of rice with spices and adjust the water to it. Close the opening of the bamboo using a banana leaf and tie it. Next bamboo need to be placed in living coal for 30-45 minutes for cooking. Turn sides after 15 minutes. Also check it once after 30 minutes. If you feel it not cooked keep again in the living coal. It’s better to check in between as tie extra thread to bamboo.

The bamboo vegetable biryani is tasty and delicious too. Bamboos and living coal flavours are well combined with this vegetable biryani. So, taste differs from other biryani.

  • Select a bamboo of 1 feet and clean it well.
  • Chop onion, beans, tomato, mint leaves, coriander leaves, carrot, green chilly.
  • In a kadai heat ghee and oil, add onion, fry until turn to brownish. Along with this add spices like clove, cinnamon, cardamom, star anise.
  • Add ginger garlic paste, green chilly and tomato sauté well until tomatoes mushy.
  • Add all chopped beans, carrot, mint leaves, coriander leaves sauté well for 5 minutes.
  • Add turmeric, biryani masala, lemon juice, salt and sauté well.
  • Add washed rice and mix well.
  • Add to a mixed rice to bamboo and water to it.
  • Take a piece of banana leave and tear it for smoothness, wrap to bamboo and tie it.
  • Keep in living coal at 40 to 45 minutes.
  • Empty the bamboo or break into half. Tasty and unique bamboo veg biryani is ready. Have it like that or serve with raita or ketchups.

Notes

  1. Add a pinch of salt while frying onion. It will not take more time to turn golden color.
  2. Take required water for rice as separate and later adjust in bamboo.
  3. I have kept 45 minutes rice to boil. Take the bamboo outside in 30 minutes and you can check by removing tie.
  4. While you are touching or removing from living coal you have to very careful. It is too hot to touch.
  5. Once you are removed from living coal Bamboos are hot for 30 minutes.
