- Take a mixer jar, add semolina/suji, chopped almonds, cashew nuts, cardamom and grind until you get a powder texture.
- In a large mixing bowl add oil and sugar and mix well for 5 minutes.
- Add milk again and mix well for 3-4 minutes.
- Add dry ingredients like ground semolina - nuts powder, gulab jamun mix ( i use MTR brand), baking powder, baking soda, vanilla essence stirring continuously to form a smooth batter.
- The batter should have a thick, pourable consistency. If it's too thick, you can add a little more milk to adjust the consistency.
- Pour the batter into the prepared cake pan and tap it gently on the counter to remove any air bubbles.
- Place the pan in the preheated kadai or oven and bake for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
- For preparing sugar syrup, in a saucepan add sugar, water, saffron, cardamom powder, lemon juice, and let boil for 5 minutes on medium flame.
- Once the cake is done baking, remove it from the oven and let it cool in the pan for 10 minutes.
- Carefully transfer the cake to a wire rack to cool completely before slicing.
- Using a fork makes holes to pour sugar syrup.
- Pour and spread prepared sugar syrup.
- Garnish with finely chopped almonds on the top of the cake.
- Soft and Spongy Gulab Jamun mix cake is ready. Slice the cake.
- Serve it as a dessert or with tea. The cake has a lovely, moist texture with the distinct flavor of Gulab Jamun and the subtle graininess of suji.
