Bitter guard also called as bitter melon / bitter apple / bitter gourd / karela / bitter squash / balsam-pear. Bitter melon originated in India. It is widely used in the cuisines of East Asia, South Asia, and Southeast Asia. It is unique vegetable-fruit that can be used for food and medicine. It contains Iron, magnesium, and vitamin c. The bitter guard fruit has distinct warty looking exteriors and an oblong shape. It helps to maintain blood sugar level and lowers the bad cholesterol. It is cures hangover and cleanses the liver and helps in weight loss and eyes.
Bitter guard is one of the best fritters with rice. Many people hate bitter guard because it is bitter taste. But when bitter guard fried it tastes good so people like bitter guard fritters.
For bitter guard bajji, I used simple ingredients which are available in our kitchen. Bitter guard bajji is very easy and simple to make. The Bitter guard bajji's are very crispy. I learnt this beautiful pakoda recipe from my grandmother. She is doing so perfect when she is having bitter guard.

Instructions

Take 1 Bitter guard, remove inner core, cut into small pieces

Add Salt & Red chilly powder, Mix it & Keep aside for 15 minutes.

Add 3 sp Rice flour, 1.5 sp Besan / Chickpea flour, 0.5 sp Hing. Mix well.

Adjust the consistency & fry it in a oil.

Bitter Guard Bajji / fritter can be served for a lunch or dinner.
