Yard Long / Asparagus Bean Stir Fry

Yard long Bean stir fry is a simple dish with goodness of fresh ingredients. This recipe is specifically from the Malabar region of Kerala, style known as thoran. Ingredients
  • 3 cup Cut Yard Long Bean
  • 0.5 tbsp Turmeric Powder
  • 1 tbsp Jaggery
  • 0.5 tbsp Red Chilly Powder
  • 0.25 cup Grated Coconut
  • 2 tbsp Oil
  • 1 tbsp Urad Dal
  • 2 qt Red Chilly
  • 1 tbsp Mustard
  • 12 qt Curry leaves
  • 1 tbsp Salt (Adjust as per Taste)
Instructions
  1. Clean and chop the Yard long bean into small pieces.
  2. In a pan add oil, urad dal, red chilly, mustard and curry leaves for tampering.
  3. For the prepared tampering add chopped yard long bean, turmeric powder, red chilly powder, jaggery, salt for taste, and small amount of water and Cook well.
  4. Once long bean cooked, add grated coconut and mix well.
  5. Healthy and yummy yard long bean stir fry is ready. We can serve with hot rice or chapathi.
