White chitranna or Rice bath is always a time saver. This recipe is very easy and simple to prepare. This chitranna is a beloved South Indian dish that exudes comfort, tradition, and a perfect blend of flavors. At first glance, White Chitranna presents a canvas of pure simplicity. A mound of perfectly cooked rice takes center stage, inviting you to explore its texture and taste. But it’s the delicate infusion of ingredients and the careful balance of flavors that transform this dish into a masterpiece.
Usually chitranna is very colorful because of turmeric and lemon juice. This recipe is different because not adding both. In Kannada, “Chitra” means colorful or variegated, and “Anna” means rice. The dish lives up to its name by combining an array of vibrant ingredients that create a visual feast on the plate.
This recipe is new, because usually I prepare chitranna adding turmeric powder and all. But I was bored with that recipe, so this recipe is innovative.

Chitranna’s enchanting aroma comes from its unique tempering process. Mustard seeds, chana dal (split chickpeas), urad dal (black gram), curry leaves, and green chilies are sautéed in oil or ghee until they release their tantalizing fragrances. This tempering is then poured over the rice, infusing it with layers of enticing scents.
This recipe has minimum ingredients. The nuts are added to this recipe because of the rich flavor and taste of white chitranna. Nuts are added how much we want but here I added ground nuts and cashew nuts. Other dry fruits or nuts can be added to this simple recipe. Instead of black pepper you can add green chili for spiciness.
Beforehand I cooked the rice with a little salt. This method of making rice gives a nice taste. Instead of this you can add salt later also. This recipe can be prepared with leftover rice also. This recipe is easy so we can prepare a lunch box. The white chitranna any day we can prepare like breakfast, lunch or dinner. This recipe does not require any side dish as well. Personally I love the combination with curd or pickle.

- Take a cooker, add washed rice and required water, salt and make 3 whistles.
- In a kadai add oil or ghee and roast the ground nuts, cashews until it turns to a semi golden color. Keep aside.
- For the same kadai add toor dal, urad dal, cumin, red chilli mustard seeds, curry leaves and prepare the tempering.
- Add chopped onion and saute well until it turns to golden color.
- Add black pepper powder, salt and saute well.
- Add cooked rice, coriander leaves and mix well.
- Add roasted ground nuts and cashews and combine everything.
- Enjoy the delicious white chitrannam or rice bath.
