Watermelon pudding is very easy and quick to prepare. It is one of the quick snacks or after meals we can have like a dessert. Watermelon pudding can be done with so many varieties. I am sharing one of the variety and easy methods.
This watermelon fruit contains lots of water and it is one of the best fruits for the summer. Pudding is one of the easiest and simplest desserts.
I made watermelon pulp by removing all seeds from it and chopped small pieces and grind it for pulp. Later boiled and added cornflour slurry for the immediate thickness and started to jelly texture. Then if you want you can add another flavor. Once it is thick or starting to jelly, turn off the flame and leave for a few minutes to cool down. For sweetness i added white sugar, instead of this you can try with brown sugar, color and taste is little vary. Don’t use jaggery for this recipe, it will ruin the taste of pudding.
Using a plastic container or glass container pour the prepared jelly and refrigerate for one or two hours. Refrigerating requires more time than making. Once it is refrigerated properly the beautiful jelly texture pudding is getting. Desiccated coconut is completely optional, if you like you can add otherwise you can skip this method.

- Take a watermelon pieces, remove the seeds and grind into juice.
- In a pan add watermelon juice, sugar and boil well until sugar dissolves.
- Add corn flour slurry and cook well until it thickness.
- Leave for few minutes and pour to plastic mould or glass jar.
- Refrigerate 2 to 3 hours.
- Remove from mould and cut into shape and sprinkle some desiccated coconut.
- Enjoy the watermelon pudding after chill.
