  • Take a tender ridge gourd, peel the hard skin and chop into pieces.
  • In a pan, heat some oil, add chana dal, urad dal, cumin, fenugreek seeds, ground nuts and roast for 2 to 3 minutes.
  • Add red chili, till leaves and roast it for 2 minutes.
  • Add coconut and roast it until it turns to golden color.
  • Once roasted species are cooled down, transfer to a mixer jar.
  • Add a little amount of water and grind to a paste texture.
  • In a kadai add oil, mustard seeds, curry leaves and fry for a minute.
  • Add garlic chopped, onion slices and saute well.
  • Add chopped tomato saute well until it starts to mushy.
  • Add chopped ridge gourd and fry for a minute.
  • Add salt, jaggery, turmeric powder, little amount of water and mix well.
  • Close the lid and cook until pieces are cooked.
  • Add ground masala paste and mix everything without any lumps.
  • If required add water to the consistency.
  • Allow to boil for 3 to 4 minutes.
  • Add coriander leaves and mix well.
  • Tasty and Super easy ridge gourd gravy is ready.
  • Serve with hot rice or chapati or roti.
