Rice peanuts are very simple and easy to prepare. Every day I want something for a tea or coffee snack. So exploring new recipes with what I have. Similarly i started the recipe ends like this beautiful cutlet. It was an interesting recipe and easy of course healthy because less oil. 

For preparing this recipe you do not need many ingredients and all are easily available in our kitchen pantry. Roasted peanuts give a nice texture to the cutlet. Rice and peanuts are a good combination for the recipe. I added onion along with this. You can add potatoes too. But if you want something simple then add only Onion. Masala is combined with only jeera and red chilli powder, you can add additional masala like chat masala, garam masala. 

Once I roasted the rice, red chili, peanuts then grind it to a smooth powder texture. Making powder texture is a little difficult because peanuts are there. Usually  peanuts release oil when we grind. So we should give a time gap while grinding.  

I was given a small round shape for the cutlet using my hand.. You can take some dough and roll it. Rather than round shapes you can try with other shapes too. If you want to deep fry instead of shallow fry you can deep fry in the hot oil. I do not prefer oily food so I go with shallow fry in the pan.

This cutlet is enjoyed by kids as well as elders. I am serving this cutlet with tomato ketchup or green chutney. Both combinations give delicious taste to our taste buds.

  • Take the rice, wash it and dry it in clean cloth for about one hour.
  • Take a kadai, add dried rice, red chili, peanuts and roast for 10 minutes on high flame.
  • Transfer the roasted ingredients to a plate and allow to cool.
  • Take a mixer jar, add roasted ingredients and grind it to a powder texture.
  • In a bowl add powder mixture, add chopped onion and coriander leaves, jeera powder, red chili powder and salt and mix well.
  • Add water gradually and combine the mixture into a dough.
  • Take a small amount of dough, roll or flatten it using your hand.
  • Take a pan, heat oil and place the prepared cutlet and cook both the sides.
  • Now a tasty and simple rice peanut cutlet is ready to serve with ketchup or chutney.
