Puliyogare gojju is one of the traditional and authentic recipes. The gojju is prepared with tamarind extract and some spices and it is a little spicy also.  Masala powder is prepared with fresh spices which are available in our kitchen. This Puliyogare gojju is prepared once in a lot of quantities and used to mix whenever we require. This is one of the specialities of this gojju.

The gojju and puliyogare powder is available in the market in plenty, but I prefer homemade gojju. When I want to go from my home to my parents’ home I will prepare this gojju. It will help my husband to prepare the puliyogare in his busy time. When gojju is readily available then keep the rice and mix it and enjoy the food. It can be used for breakfast, lunch or dinner. And it doesn’t need any side dishes.

The Gojju is prepared with a lot of fresh spices. The spices are roasted along with dry coconut. The red chillies are adjusted according to your tastes. Dry coconut gives a wonderful taste to the gojju. While roasting the spices you should keep in medium flame and roast until it turns to golden brown colour. After completely cools down, blend it to a fine powder.

Prepare simple tempering and add tamarind pulp and oil and give a nice boil, then add prepared masala and jaggery and give a nice mixture to it. You have to keep stirring until the oil releases from the gojju. Otherwise you cannot store it at room temperature or the gojju will spoil quickly. Once you prepare the gojju after it cools down, you have to store it in an airtight container.

When you are trying the gojju you feel like it is quite lengthy or difficult to prepare. But it is worth preparing and storing in the fridge. In a hurry-burry life or when the guests come suddenly, suddenly if you feel like eating something tasty. You can mix this gojju with steamed rice. The tasty rice is ready to serve.

  • Take a pan and roast the sesame until it turns golden and keep aside.
  • In the same tawa add oil, coriander seeds, cumin, urad dal, chana dal, mustard, pepper seeds, methi seeds and roast it about golden colour.
  • Add dry coconut, red chilli and curry leaves and roast it golden colour.
  • Once it cools down, transfer to a blender and make fine powder.
  • Puliyogare Gojju
  • In a bowl, add tamarind and soak in hot water for 1 hour. Squeeze off the tamarind pulp and keep aside.
  • In the pan add oil, red chilli, mustard, red chilli, hing, and a few curry leaves.
  • Add the extract of tamarind pulp, if required add water and squeeze the tamarind.
  • Add turmeric powder and mix well. Cover and boil it for 20-25 minutes.
  • Add jaggery, salt and stir well. Again boil well for 10 minutes in the simmer.
  • Add prepared masala powder and stir well. Keep stirring until oil separates from all the sides.
  • Now puliyogare gojju is ready, store in an airtight container and prepare puliyogare on busy days.

Notes

  1. While preparing the gojju oil must be separated from oil for better taste.
  2. Don't use less oil.
  3. Use glass jar for longer shelf life at room temperature, otherwise keep in the refrigerator.
