Chickpeas are known for their nutty flavor and creamy texture, making them a versatile ingredient in vegetarian cooking.

To prepare Ivy Gourd Chickpea Stir-Fry, fresh ivy gourd is washed and sliced into thin rounds, while cooked chickpeas are drained and rinsed if using canned. The stir-fry begins with heating oil in a skillet or wok and adding aromatic spices such as cumin seeds, mustard seeds, and curry leaves to infuse flavor into the oil.

Next, the sliced ivy gourd is added to the skillet and stir-fried until it starts to soften and develop a golden brown color. Then, the cooked chickpeas are added to the skillet along with additional spices and seasonings such as turmeric, chili powder, and salt.

The stir-fry is cooked over medium heat until the ivy gourd is tender and the flavors have melded together. Fresh herbs such as cilantro or parsley can be added at the end for a burst of freshness and color.
