Homemade Cocoa Powder is made by roasting cocoa beans; grind nibs to a powder texture. Cocoa Powder made by processing the cocoa naturally.
Cocoa is one of the different fruit in world. Cocoa trees are grown in West Africa, South America and Asia. Pods grow directly from the trunk or large branch in the tree. Cocoa pod is rough and leathery rind. This fruit filled with mild sweet and white layered or mucilaginous pulp inside.
Cocoa powder is key ingredient for the preparation of chocolates. Cocoa powder is unsweetened chocolate product. So it gives various health benefits to our body like antioxidants, vitamins, minerals.
For cocoa powder, Yellowish and light greenish colour from outside of cocoa pods are preferred. When i get the cocoa pods, I broke it open and removed all the white layered cocoa beans and transferred to a bowl. Added water and squeezed well. After squeezing, transfer to a plate for sundry. Sundry should be done for at least 5-8 days. Later add all the cocoa beans to a pan and dry roast for 2-3 minutes or starts spluttering. Then remove all outer cover to get cocoa nibs from cocoa beans. Once i collect all cocoa nibs, transfer to a jar and grind to a powder. Sieve the ground powder to get the fine powder.
We need to keep for sundry for at least 6 to 8 days, if not dried well the taste of the cocoa powder will not be good. While dry roasting of cocoa beans also we cannot overdo it. If we are roasted more the cocoa powder become bitter and nibs will break.
I suggest this method for small batch of doing the cocoa powder. For large batch, suggestion is to ferment the cocoa beans then to a powder. Fermented cocoa powder tastes and quality wise also will be good.

- Take yellow and light green cocoa pods break it using stone or knife.
- Remove all cocoa seeds from pods in a vessel.
- Add enough water and squeeze well. You can continue this process for twice or thrice.
- Once you squeezed all seeds strain and collect all seeds.
- In a plate spread a cloth and put all squeezed cocoa beans.
- Keep for sundry at least 6 to 8 days. After you can check the beans are dried or not crushing the bean using hand.
- Take a pan, dry roast cocoa beans for 2 to 3 minutes.
- Remove outer cover and collect all cocoa nibs.
- Take a mixer jar; put all collected cocoa nibs and grinds to get a powder texture.
- Sieve the ground powder.
- Homemade cocoa powder is ready. Try with any recipes like chocolate, smoothies, cake, ice cream and so on.
