Coconut barfi, as name says it all by how sweet it is. I used only 3 ingredients to this sweet that is coconut, sugar and cardamom powder.

 

Coconut is a very versatile and indispensable food item for most people. It is a complete food rich in calories, vitamins, and minerals. Coconut water is a very refreshing drink to beat tropical summer thirst. Coconut oil extracted from the dry kernel (copra) is an excellent emollient agent.

Coconut is in a firm texture and sweet in taste. It have protein, minerals, vitamins etc. Coconut is good for health and it improves immunity.

This is one of the famous sweet in Mangalore, My family members favourite sweet too. Healthier alternative would be jaggery more than sugar you can try out with that also but it will come brownish in colour.

  • First, grate the coconut and grind it like a powder.
  • Take one pan, add coconut powder and fry until turn into little brown.
  • Fried coconut powder and keep aside. Take one pan, add sugar and little water and boil it for 15 to 20 minutes for thick sugar syrup.
  • For that syrup, add fried coconut and cardamom powder and stir it nicely.
  • After 5 min , it will leave from pan then take away from stove.
  • Put in oil or ghee applied plate and set nicely.
  • After set, keep for 5 min and cut into shape. Then leave for cool. After cooling, reverse to one paper, it will releases nicely like a piece.
