Brinjal Ennegayi is a well combination with chapathi, rotis and hot rice. Brinjal is well combined with tampering and seasoning. Tamarind pulp and ground nut beautifully blend with Brinjals. The grated coconut, coriander seeds and red chilly gives nice texture to ennegayi.

  • Cut the brinjal edges and soak in water for 15 minutes.
  • In a pan add ground nut and roast well.
  • In a mixer jar, add grated coconut, roasted nuts, onion, tomato, red chilly, coriander, jeera, ginger, garlic and small amount of water and grind like a paste.
  • Take a pan or kadai add oil, urad dal, jeera, mustard, curry leaves for tampering.
  • For tampering add onion, tomato saute well for 2 minutes. and add turmeric, red chilly powder, coriander powder, aamchur powder, and required amount of water. Add grind paste, brinjals, tamarind pulp, salt for taste and cook well.
  • Once cooked,Finally, add chopped coriander leaves. Healthy Brinjal Ennegayi is ready to eat with chapathi / roti.
