- Cut the brinjal edges and soak in water for 15 minutes.
- In a pan add ground nut and roast well.
- In a mixer jar, add grated coconut, roasted nuts, onion, tomato, red chilly, coriander, jeera, ginger, garlic and small amount of water and grind like a paste.
- Take a pan or kadai add oil, urad dal, jeera, mustard, curry leaves for tampering.
- For tampering add onion, tomato saute well for 2 minutes. and add turmeric, red chilly powder, coriander powder, aamchur powder, and required amount of water. Add grind paste, brinjals, tamarind pulp, salt for taste and cook well.
- Once cooked,Finally, add chopped coriander leaves. Healthy Brinjal Ennegayi is ready to eat with chapathi / roti.
