  • Take a bowl, add barley, wash a couple of times and soak for 2 hours.
  • In a vessel add water and allow to boil.
  • Add soaked and washed barley to boiling water, close the lid.
  • Cook for 15 minutes or until it softens and keep aside.
  • In a kadai, add melted butter and finely chopped onion and saute well.
  • Then add boiled corn and mix well.
  • Add pepper powder, dry ginger powder and salt and mix well.
  • Add cooked barley without water and mix well for 3-4 minutes or until water evaporates.
  • Add coriander leaves and mix well.
  • Healthy barley salad is ready to serve. Enjoy.
